Öko Caribe purchases wet cacao beans from 165 small farmers in the Duarte province. They control the fermentation and drying process at their centralized facility.
Wet cacao beans arrive at the fermentation centre in less than six hours. Fermentation lasts between 5-6 days in four tier cascading boxes. The drying is completed in solar tunnels to combat the rain and humidity of the tropical climate.
Fun fact: Approximately 10% of the Dominican Republic’s land is dedicated to cacao cultivation.
